Spice Cake

A Heart-Healthy Desserts & Snacks Recipe

  • ¼ cup light-tasting olive oil
  • ½ cup honey
  • ½ cup molasses
  • 2 eggs
  • 1 15-oz can unsalted or low-sodium pinto beans, rinsed and drained and slightly mashed with a fork or your hands
  • ¾ cup seedless raisins
  • 2 tsp. vanilla extract
  • 1 cup whole-wheat flour
  • 2 tsp. baking powder
  • 2 tsp. cinnamon
  • ½ tsp. ground cloves
  • ½ tsp. ground nutmeg
  • 2 medium apples, peeled and grated

Preheat oven to 350° F. Spray a 13 X 9 X 2-inch pan with nonstick cooking spray. Combine all ingredients in a large bowl and mix until well combined. Pour into pan and bake 50 to 55 minutes or until a toothpick inserted in the center of the cake comes out clean.

Makes 16 servings.
