Shrimp With Peppers, Tomatoes, and Garlic
A Heart-Healthy Entrée Recipe
- 1 Tbsp. olive oil
- 2 cloves garlic, minced
- 1 green pepper, chopped
- 1 red pepper, chopped
- 1 medium onion, chopped
- ¼ cup cooking sherry
- 1 tsp. ground coriander seed
- 1 cup no-salt-added crushed tomatoes
- 1 cup no-salt-added tomato sauce
- ¼ tsp. black pepper
- ½ tsp. brown sugar or honey
- 1 lb. cooked large shrimp
- 8 oz. whole-wheat pasta, cooked according to package directions
Heat oil in a large frying pan over medium heat and sautée garlic, peppers, and onion until tender. Add sherry and bring to a boil. Add rest of ingredients, bring to a boil again, and then serve over pasta.
