Shrimp With Peppers, Tomatoes, and Garlic

A Heart-Healthy Entrée Recipe

  • 1 Tbsp. organic extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 1 medium onion, chopped
  • ¼ cup cooking sherry or dry white wine
  • 1 tsp. ground coriander seed
  • 1 cup no-salt-added crushed tomatoes
  • 1 cup no-salt-added tomato sauce
  • ¼ tsp. black pepper
  • ½ tsp. brown sugar or honey
  • 1 lb. cooked large shrimp
  • 8 oz. short-grain brown rice or quinoa, cooked according to product directions

Heat oil in a large frying pan over medium heat and sautée garlic, peppers, and onion until tender. Add sherry and bring to a boil. Add rest of ingredients, bring to a boil again, and then serve over short-grain brown rice or quinoa.

Makes 4 servings.
