Roasted Salmon Salad

A Heart-Healthy Salad Recipe

Wild salmon is one of my favorite heart-healthy foods. It's loaded with omega-3 essential fatty acids, which support your heart, brain, joints, and overall health.

  • ½ lb. cooked fresh wild roasted Alaskan salmon, chopped
  • 2 unpeeled, cooked red potatoes, quartered and cooled
  • 4 cups chopped organic spinach or green leaf lettuce

  • 1 Tbsp. balsamic vinegar
  • 1 Tbsp. Dijon mustard
  • 2 Tbsp. organic extra virgin olive oil
  • 2 Tbsp. water
  • 1 Tbsp. lemon juice
  • 1 tsp. dried basil
  • 1 tsp. honey

Wisk dressing ingredients together in large bowl. Add all salad ingredients and toss gently. Feel free to experiment, adding organic cherry tomatoes or other vegetables to your salad.

Makes 2 servings.
