A Heart-Healthy Breakfast Recipe
- 2 cups buckwheat flour
- 1 tsp. baking powder
- 2 cups soy milk or water
- 2 eggs
- 1 Tbsp. coconut oil
- 1 Tbsp. honey
- ½ cup berries/chopped almods of walnuts (optional)
Stir all dry ingredients together. Add the soy milk or water, eggs, oil, and honey. Mix briefly. Add the berries, if using, and stir gently. Cook on a hot, lightly oiled griddle. (NOTE: Pancakes will be thin and dense.)
Makes 14 servings.
