Heart-Healthy Cranberry Slaw

As  the Thanksgiving holiday approaches, you are probably considering what to make for the big meal. So, I wanted to once again share one of my favorite heart-healthy Thanksgiving recipes for cranberry slaw.

Cranberries are one of the top heart-healthy food on the Thanksgiving table. Not only are cranberries low in calories (25 calories per half cup), they're loaded with antioxidants, fiber, vitamin C, and vitamin E. Plus, research has shown that the polyphenols in fruits like cranberries may help to prevent LDL oxidation, reduce blood pressure, and inhibit platelet oxidation.  

Many people serve cranberry sauce to their Thanksgiving table, which is loaded with sugar which can lead to inflammation. So, instead, at our Thanksgiving table we make heart-healthy cranberry slaw. Not only does it give you the health benefits of cranberries, it contains heart-healthy olive oil, fiber-rich cabbage, and more.

Heart-Healthy Cranberry Slaw

½ head green cabbage (about 2 cups), shredded
½ head red cabbage (about 2 cups), shredded
6 scallions, sliced, or 1 small red onion, diced (or use a combination of both)
1 cup dried cranberries
½ cup extra virgin olive oil
¼ cup balsamic vinegar
½ tsp. Celtic sea salt
½ tsp. ground black pepper
1 tsp. ground cumin
½ tsp. ground, dried mustard powder

Mix together cabbage, onions, and cranberries in large bowl. Whisk oil, vinegar, and seasonings in a small bowl. Pour over cabbage mixture; mix thoroughly. Marinate in refrigerator for 1 hour.

(Makes 8 servings, and keeps for 4-5 days.)
