Harvest Chicken Curry Medley

A Heart-Healthy Entrée Recipe

This recipe combines several heart-healthy ingredients, including apples, onions, and curry--to make an extremely delicous dish.

  • 2 boneless, skinless chicken breasts
  • 1 large onion, coarsely chopped
  • 2 medium apples, sliced
  • ¼ cup raisins
  • 1 tsp. curry powder
  • ½ tsp. cinnamon
  • ½ tsp. allspice
  • ½ tsp. nutmeg

Pre-grease glass baking dish with organic butter or light olive oil. Place chicken breasts in a baking dish, along with chopped onions, apples, and raisins. Sprinkle with curry powder, cinnamon, allspice, and nutmeg—and bake in the oven at 375°F for approximately 25 minutes or until the chicken is done. Pairs well with a fresh salad, especially an organic spinach salad.
