Garlicky Chicken

A Heart-Healthy Entrée Recipe

  • 4 chicken breasts
  • 2 cans diced tomatoes
  • 1 package low/no-gluten pasta (spelt, Jerusalem artichoke, or farro)
  • 2 Tbsp. olive oil
  • 3 cloves garlic, minced

Cook pasta according to directions. After you put the pasta water on to boil, sauté the garlic in the olive oil, then add the chicken breasts and brown them in the oil. Once they're nicely browned, add the tomatoes and cook until the chicken is done and the juice from the tomatoes is reduced. Serve over the cooked pasta.

Makes 4 servings.
