Easy Broiled Chicken Breast
A Heart-Healthy Entrée Recipe
- 2 boneless and skinless chicken breasts (about 4 to 5 ounces each)
- ¾ cup extra virgin olive oil
- Black pepper to taste
- 8 oz. cooked brown rice
Marinate the chicken breasts in olive oil for at least 2 hours. (Marinating overnight provides a more flavorful chicken).
Remove from the marinade, place on a broiling pan, sprinkle with pepper, and broil on each side for 4 to 5 minutes, or until cooked through. Serve with brown rice.
