Couscous Salad With Apricots, Pine Nuts, and Ginger
A Heart-Healthy Salad Recipe
- 1 cup instant couscous
- ½ cup water
- 1 cup fresh orange juice
- 1 Tbsp. olive oil
- 2 Tbsp. white wine vinegar
- 8 dried apricots, thinly sliced
- 2 tsp. grated ginger
- dash of salt
- 1 Tbsp. raisins
- 2 Tbsp. pine nuts
- chopped small red onion
Pour the couscous into a mixing bowl. Combine the water, juice, olive oil, and vinegar in a saucepan. Bring to a boil and stir in the dried apricots, ginger, and 1/2 tsp. salt. Pour immediately over the couscous, cover, and let sit for 20 minutes.
Drop the chopped red onion in a pot of boiling water for 15 seconds, drain well, and toss it with a few splashes of vinegar. When the couscous is ready, fluff it with a fork and toss with the raisins, pine nuts, and onion. Add salt to season and a splash of vinegar to brighten the flavor.
Makes 6 servings.
