Chinese Chicken Salad

A Heart-Healthy Salad Recipe


  • 1 ½ tsp. olive oil
  • 1 ½ tsp. honey
  • 1 ½ tsp. sesame oil
  • 2 Tbsp. natural unsalted peanut butter
  • 2 Tbsp. unseasoned rice wine vinegar
  • 2 Tbsp. lime juice
  • 1 Tbsp. low-sodium gluten free tamari sauce
  • 1/8 tsp. ground ginger mixed with 2 cloves minced/chopped garlic
  • Garnish with a pinch of garlic powder or Celtic sea salt


  • ½ lb. diced cooked chicken breast
  • 2 scallions, chopped
  • 1 stalk of celery, chopped
  • ½ red pepper, chopped
  • 3 cups baby spinach
  • 1 cup Chinese cabbage, shredded
  • 2 tsp. toasted sesame seeds

In medium bowl whisk together dressing ingredients. Add chicken, scallions, celery, and red pepper. Serve over spinach and cabbage, and garnish with sesame seeds.

Makes 2 servings.
