When it comes to eye health, it is essential that you get plenty of carotenoids in your daily diet—including lutein and zeaxanthin. Carotenoids, primarily found in fresh fruits and vegetables, promote both eye health and heart health.
One of the best sources of these eye health nutrients is broccoli and one of my favorite ways to enjoy it is in broccoli soup. This broccoli soup recipe is chock full of the carotenoids you need to protect your eyes health and your heart. Enjoy!
Broccoli Soup Recipe
(Makes 5 servings)
5 cups low sodium chicken stock
1 lb. fresh broccoli, chopped
1 medium onion, chopped
1 clove garlic, minced
1 Tbsp. freshly squeezed lemon juice
2 Tbsp. curry powder to taste (optional)
Black pepper to taste
In a large pot, bring the stock to a boil over medium heat. Add the broccoli, onion, and garlic, and simmer until soft, about 30 minutes. Purée the soup in a food processor or blender, return to the pot, and add the lemon juice and pepper. For an extra kick, add the curry powder right before you purée the soup.
