Beets With Garlic

When people thinking of heart-healthy foods, they rarely mention beets. But beets have important heart health benefits, including helping to support homocysteine and blood pressure. This recipe is a favorite in our house. It combines beets with two other heart-healthy foods, garlic and olive oil, making this recipe a perfect trifecta of ingredients that support your heart.

Tip: You want to choose beets that are smooth and free of blemishes. If they contain leaves that are green and not wilted, that's a sign that the beets are fresh.

A Heart-Healthy Vegetable Recipe: Beets with Garlic

  • 6 medium-sized organic beets
  • 3 tablespoons organic extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic, minced
  • Organic Celtic sea or Kosher Salt and fresh ground pepper to taste

Wash beets, trim off green tops, but do not peel. Boil until tender, about 30-45 minutes. Run cold water over the boiled beets, and when cool enough to handle, slip off the skins. Slice the beets and toss with the olive oil, vinegar, garlic, salt, and pepper.
