Antiguan Black Bean Soup
A Heart-Healthy Soup Recipe
- 2 Tbsp. olive oil
- ½ green pepper, chopped
- 1 onion, chopped
- ½ clove garlic, minced
- ½ pound dried black beans cooked according to package directions, or two 16-ounce cans drained black beans
- Freshly ground pepper
- 1 Tbsp. red wine vinegar
- 1 bay leaf
- 2 quarts water
- 1 cup short-grain brown rice, cooked
- Fresh parsley, chopped
In large saucepan, combine olive oil, green pepper, onion (reserve some raw onion as a topping), and garlic. Sauté until tender. Add precooked or canned black beans, pepper, vinegar, bay leaf, and water or broth. Simmer for 30 to 40 minutes. Top with raw onion, brown rice, and parsley.
Makes 6 servings.
